A treat, a snack, a condiment, and a wonderful side dish on the Thanksgiving table—homemade applesauce is truly one of the easiest and most delicious recipes you can make. With the bounty of apples available this time of year, it is the perfect season to try this recipe. You can use any apple you have on hand, but a crisp, sweet apple like Gala or Golden Delicious works well.
Applesauce is a wonderful addition to pancake and muffin recipes. In fact, it is a great substitute for the oil in many baked goods. As a child, I loved it over French toast, sprinkled with powdered sugar; and if you have never had warm applesauce over vanilla ice cream, well, you are in for a real treat! Be sure to sprinkle a bit of cinnamon overtop before serving.

Yield: Serves 10
10 apples, peeled, cored, and chopped
1 medium-sized lemon, zest cut into strips and juiced (about 3 tablespoons)
1 cinnamon stick
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
¼ cup brown sugar
¼ cup filtered water, room temperature
½ teaspoon salt
Optional: maple syrup, allspice, butter, apple juice or cider, to taste.
Place all ingredients in a medium-sized saucepan, toss to coat the apples well and cover. Cook over medium heat, stirring occasionally, for 20 minutes or until the apples are soft.
Allow the apples to cool, then remove the cinnamon stick and lemon zest. Mash the apples with a fork or potato masher or use an immersion blender if you like a smoother consistency. Adjust seasoning to taste.
Store in a covered jar in the refrigerator for a week to ten days. Serve cold, room temperature or warmed.
Applesauce can also be frozen or canned for longer-term storage. It is one of the many Thanksgiving recipes you can make ahead for a stress-free holiday.
